🍞 Air Fryer Bread and Butter Pudding

Ingredients:

  • 6 slices of white bread

  • Butter (enough to spread on both sides of each slice)

  • 3 large eggs

  • 300 ml (1¼ cups) milk

  • 2 tbsp sugar (caster or granulated)

  • 1 tsp vanilla extract (optional)

  • A handful of currants or raisins

  • A little extra butter for greasing the dish

  • A pinch of nutmeg or cinnamon (optional)


Instructions:

  1. Prepare the bread:

    • Butter both sides of each slice of bread.

    • Cut into triangles or halves.

    • Grease a small ovenproof or air fryer–safe dish with butter.

  2. Layer the pudding:

    • Arrange the buttered bread slices in the dish, slightly overlapping.

    • Sprinkle some currants (or raisins) between layers and on top.

  3. Make the custard:

    • In a bowl, whisk together the eggs, milk, sugar, and vanilla extract.

    • Pour this mixture evenly over the bread, pressing the bread down gently so it soaks up the liquid.

    • Let it sit for 5–10 minutes to absorb.

  4. Cook in the air fryer:

    • Place the dish into the air fryer basket.

    • Set the air fryer to 160°C (320°F).

    • Cook for 25 minutes, or until the top is golden brown and the custard has set.

  5. Serve:

    • Let it cool slightly before serving.

    • Enjoy warm with custard, cream, or ice cream.
