Ingredients

  • 1 box yellow cake mix (or homemade equivalent)
  • 1 can (20 oz) crushed pineapple, undrained
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 tsp vanilla extract
  • ½ cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 68 pineapple rings (fresh or canned, drained)
  • Maraschino cherries (optional, for garnish)

Instructions

  1. Preheat oven to 350°F. Melt butter in 9×13-inch baking dish in oven.
  2. Sprinkle brown sugar over melted butter. Arrange pineapple rings and cherries on top.
  3. In large bowl, combine cake mix, undrained crushed pineapple, sour cream, oil, eggs, and vanilla. Beat for 2 minutes until well blended.
  4. Pour batter evenly over pineapple arrangement.
