Ingredients (Makes 6 Muffins):

  • 1 cup self-rising flour (or use 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt)

  • 1 cup non-fat plain Greek yogurt

  • â…“ cup reduced-fat shredded mozzarella cheese

  • 12 slices turkey pepperoni, chopped

  • 1 tsp Italian seasoning

  • Pinch of garlic powder

  • Optional: Marinara sauce (for dipping, not included in points)

🔥 Instructions:

  1. Preheat oven to 375°F (190°C). Spray a muffin tin with non-stick spray.

  2. In a bowl, mix flour and Greek yogurt to make dough.

  3. Add in cheese, pepperoni, Italian seasoning, and garlic powder. Mix well.

  4. Divide dough into 6 portions and place into muffin tin.

  5. Bake for 18–20 minutes, until golden and cooked through.

  6. Serve warm — enjoy with a little marinara if you like!
