Rich layers of taco-seasoned beef, sweet peppers, creamy ranch sauce, and melted cheese over a golden biscuit base.
Ingredients
1 lb ground beef
1 medium onion, diced
½ red bell pepper, diced
½ green bell pepper, diced
1 can (10 oz) diced tomatoes with green chilies, drained
1 packet taco seasoning
1 can refrigerated biscuit dough
1 cup sour cream
¾ cup mayonnaise
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Salt & pepper to taste
Chopped parsley or cilantro (optional garnish)
Instructions
1. Preheat Oven
Set oven to 350°F (175°C). Lightly grease a 9×13″ baking dish.
2. Cook Beef Layer
Brown ground beef in a skillet over medium heat. Add onion, red and green bell peppers.
Cook 5–7 minutes until veggies are softened.
Stir in taco seasoning and drained tomatoes. Simmer 2–3 minutes. Set aside.
3. Prep the Biscuit Base
Press the biscuit dough evenly across the bottom of the baking dish.
Bake for 5 minutes until just puffed and set — do not fully cook.
4. Layer the Casserole
Top the biscuit crust with the beef mixture.
In a separate bowl, mix sour cream, mayonnaise, and ranch seasoning until smooth.
Spread creamy mixture evenly over the beef layer.
Sprinkle both cheeses generously over the top.
5. Bake It
Bake uncovered for 25–30 minutes or until the top is golden and bubbly.
Let it cool slightly before slicing for clean layers.
6. Optional Finish
Garnish with chopped parsley or cilantro for a fresh touch.
