Ingredients:
– 8 pineapple rings
– 1 cup dark rum
– 1 cup coconut rum
– 1 1/2 cups all-purpose flour �
– 1 (10-oz.) bag sweetened coconut
– 2 large eggs
– 1/2 cup coconut milk
– Vegetable oil, for frying
– 4 oz. cream cheese, softened
– 1/2 cup powdered sugar
Instructions:
1. Soak pineapple rings in rum for 1 hour. Drain and pat dry .
2. Set up three bowls: flour, coconut, and egg-coconut milk mixture .
3. Dredge each ring: flour → egg mix → coconut, pressing to coat .
4. Fry in 1-inch hot oil until golden (1 min per side) .
5. Mix cream cheese, powdered sugar, and 2 tbsp reserved rum for sauce .
6. Serve fried rings with rum sauce
