– 1 1/2 cups all-purpose flour �
– 1 (10-oz.) bag sweetened coconut ![]()
– 2 large eggs ![]()
– 1/2 cup coconut milk ![]()
– Vegetable oil, for frying ![]()
– 4 oz. cream cheese, softened ![]()
– 1/2 cup powdered sugar ![]()
Instructions:
1. Soak pineapple rings in rum for 1 hour. Drain and pat dry ![]()

2. Set up three bowls: flour, coconut, and egg-coconut milk mixture ![]()

3. Dredge each ring: flour → egg mix → coconut, pressing to coat
