Ingredients:
– 8 pineapple rings

– 1 cup dark rum 🥃
– 1 cup coconut rum 🍹
– 1 1/2 cups all-purpose flour �
– 1 (10-oz.) bag sweetened coconut 🥥
– 2 large eggs 🥚
– 1/2 cup coconut milk 🥛
– Vegetable oil, for frying 🛢️
– 4 oz. cream cheese, softened 🧀
– 1/2 cup powdered sugar 🍚

Instructions:
1. Soak pineapple rings in rum for 1 hour. Drain and pat dry 🍍🥃.
2. Set up three bowls: flour, coconut, and egg-coconut milk mixture 🏵️🥚🥥.
3. Dredge each ring: flour → egg mix → coconut, pressing to coat 🔄.
4. Fry in 1-inch hot oil until golden (1 min per side) 🔥🍍.
5. Mix cream cheese, powdered sugar, and 2 tbsp reserved rum for sauce 🧀🍚🥃.
6. Serve fried rings with rum sauce 🍽️
