Blueberry Fluffy Cottage Cheese Cloud Bread






Ingredients:
– 3 large eggs, separated 

– ½ cup cottage cheese, blended until smooth 

– ¼ teaspoon cream of tartar 

– ½ teaspoon salt 

– 1 tablespoon cornstarch or arrowroot powder (optional, for structure) 

– 1 teaspoon honey or a pinch of sweetener (optional) 

– ¼ cup fresh or frozen blueberries (chopped if large) 

Instructions:
1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper
.

2. Separate the egg whites and yolks into two bowls
.

3. Add the cream of tartar to the egg whites and beat with a mixer at high speed until stiff peaks form
.

4. In the bowl with the egg yolks, mix the blended cottage cheese, salt, cornstarch (if using), and honey or sweetener until smooth 
.


5. Gently fold the whipped egg whites into the yolk mixture in thirds, using a spatula to keep it airy
.

6. Carefully fold in the blueberries without overmixing to maintain the light texture
.

7. Scoop the mixture onto the lined baking sheet, shaping 6-8 small rounds or larger pieces as preferred
.

8. Bake for 25-30 minutes, until golden brown and set
.

9. Let the cloud bread cool completely on the baking sheet before serving
.
