Ingredients:
2.5 lbs baby Yukon gold potatoes, quartered
4-5 slices bacon, fried, chopped, and set aside
2 tablespoons bacon grease (reserved from frying)
¾ cup chicken broth
3 tablespoons Ranch Dressing Mix
Dried parsley, for garnish (optional)
Directions:
Prepare the Potatoes:
Wash and quarter the baby Yukon potatoes. Place them directly into the crock pot.
Assemble in the Crock Pot:
Pour the chicken broth evenly over the potatoes. Sprinkle the chopped bacon pieces on top and drizzle with the reserved 2 tablespoons of bacon grease for extra flavor.
Sprinkle the Ranch Dressing Mix evenly over everything.
Cook:
Cover the crock pot with the lid and cook:
On high for 3.5 hours, or
On low for 6 to 7 hours, until potatoes are fork-tender.
Serve:
Give everything a gentle toss before serving to make sure the flavor is evenly distributed. Garnish with dried parsley if desired.
