Ingredients:
1 pound lean ground beef
1 cup diced onions
3/4 tsp kosher salt
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp chili powder
1 cup beef broth
4 medium carrots, peeled and cut into chunks (or baby carrots)
1 pound Russet potatoes, peeled and cut into 1 inch cubes
1 (10.5 oz) can cream of mushroom soup
Directions:
1. In a pan over medium-high heat, cook the ground beef, breaking it up. Add onions and cook until browned, about 5 minutes. Drain off excess grease if needed. Add salt, pepper, onion powder, garlic powder, and chili powder. Transfer the mixture to the slow cooker.
2. Stir in the beef broth, carrots, potatoes, and cream of mushroom soup.
3. Cover and cook on low for 4-6 hours.
4. Season with salt and pepper to taste. Serve and enjoy!
Notes: Feel free to add more vegetables like peas or celery for extra flavor and nutrition.
