Instructions
Preheat oven to 375°F (190°C).
Wilt the spinach and squeeze out excess moisture.
Mix spinach with cream cheese, Parmesan, garlic, Italian seasoning, pepper, and red pepper flakes.
Cut a pocket into the thickest part of each chicken breast.
Divide the filling among the chicken breasts.
Secure with toothpicks if needed.
Season the chicken with salt, pepper, paprika, and garlic powder.
Sear in olive oil for 3–4 minutes per side.
Transfer the skillet to the oven.
Bake for 15–20 minutes, or until the chicken reaches 165°F (74°C).
Rest for 5 minutes.
Remove toothpicks, slice, garnish, and serve.
