Hearty Veggie Casserole

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced

  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1 cup cherry tomatoes, halved

  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the onion and cook until softened.
  3. Add garlic, bell pepper, mushrooms, zucchini, and broccoli. Cook for 4–5 minutes, stirring occasionally.
  4. Add the sliced potatoes, vegetable broth, cream, Italian seasoning, paprika, salt, and black pepper. Stir gently.
  5. Transfer everything to the prepared baking dish and spread evenly.
  6. Cover with foil and bake for about 35 minutes, or until the potatoes are tender.
  7. Remove the foil and sprinkle the mozzarella and Parmesan evenly over the top.
