- 2 tablespoons olive oil
- 1 medium onion, diced

- 1 cup cherry tomatoes, halved

- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella
- 1/2 cup grated Parmesan
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
- Heat olive oil in a large skillet over medium heat. Add the onion and cook until softened.
- Add garlic, bell pepper, mushrooms, zucchini, and broccoli. Cook for 4–5 minutes, stirring occasionally.
- Add the sliced potatoes, vegetable broth, cream, Italian seasoning, paprika, salt, and black pepper. Stir gently.
- Transfer everything to the prepared baking dish and spread evenly.
- Cover with foil and bake for about 35 minutes, or until the potatoes are tender.
- Remove the foil and sprinkle the mozzarella and Parmesan evenly over the top.
- Return to the oven and bake uncovered for another 10–15 minutes, until the cheese is melted and golden.
- Let the casserole rest for a few minutes, then sprinkle with fresh parsley and serve.
