Easy Raspberry Peach Cobbler for Your Next Summer BBQ
Ingredients
Fruit Filling
4 cups fresh peaches, peeled and sliced
2 cups fresh raspberries
1/3 cup granulated sugar
1 tablespoon fresh lemon juice
1 tablespoon cornstarch
1 teaspoon vanilla extract
Cobbler Topping
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/2 cup unsalted butter, melted
3/4 cup whole milk
Optional Garnish
Vanilla ice cream
Fresh raspberries
Peach slices
Powdered sugar
Fresh mint leaves
Directions
Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
In a large bowl, combine sliced peaches, raspberries, sugar, lemon juice, cornstarch, and vanilla extract.
Transfer the fruit mixture to the prepared baking dish and spread evenly.
In a separate bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
Stir in melted butter and milk until a thick batter forms.
Spoon the batter evenly over the fruit mixture. Do not worry if some fruit remains visible.
Bake for 40–45 minutes, or until the topping is golden brown and the fruit filling is bubbling around the edges.
Remove from the oven and allow the cobbler to cool for 10–15 minutes.
Garnish with vanilla ice cream, fresh raspberries, peach slices, powdered sugar, or fresh mint if desired.
Serve warm and enjoy.
