🦞 Grilled Lobster Tails with Garlic Lemon Butter

Ingredients (Serves 2–4)

For the lobster:

  • 4 lobster tails

  • 2 tbsp olive oil

  • Salt, to taste

  • Freshly ground black pepper

  • Paprika (optional, for color)

For the garlic lemon butter sauce:

  • 4 tbsp unsalted butter

  • 3 cloves garlic, minced

  • 1 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • 1 tbsp fresh parsley, chopped

  • Pinch of salt

  • Pinch of red pepper flakes (optional)

🔪 Step 1: Prep the Lobster Tails

  1. Using kitchen shears, cut down the top center of the shell lengthwise.

  2. Gently pull the meat upward, resting it on top of the shell (this is called “butterflying”).

  3. Brush the meat with olive oil.

  4. Season with salt, pepper, and a light sprinkle of paprika.

🔥 Step 2: Grill the Lobster

  1. Preheat grill to medium-high heat (about 400°F / 200°C).

  2. Place lobster tails shell-side down on the grill.

  3. Grill for 6–8 minutes, until the meat is opaque and reaches an internal temperature of 140–145°F (60–63°C).

    • Do not overcook — lobster becomes tough quickly.

🧈 Step 3: Make the Garlic Lemon Butter Sauce

  1. Melt butter in a small saucepan over medium heat.

  2. Add minced garlic and sauté for about 30–60 seconds (do not brown).

  3. Remove from heat.

  4. Stir in lemon juice, lemon zest, parsley, salt, and red pepper flakes.

🍋 Step 4: Finish & Serve

  • Spoon the warm garlic lemon butter over the grilled lobster.

  • Serve immediately with extra lemon wedges.
