🥣 Hearty Tuscan White Bean Soup

A rustic, comforting soup inspired by the flavors of Tuscany — creamy white beans, aromatic herbs, and hearty vegetables simmered together for a nourishing meal.

🛒 Ingredients (Serves 4–6)

  • 2 tbsp olive oil

  • 1 medium yellow onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 2 cans (15 oz each) cannellini beans, drained and rinsed

  • 1 can (14–15 oz) diced tomatoes

  • 4 cups vegetable broth (or chicken broth)

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • ½ tsp red pepper flakes (optional)

  • 1 bay leaf

  • Salt & black pepper to taste

  • 2 cups chopped kale or spinach

  • 1 tbsp lemon juice

  • Fresh parsley, chopped (for garnish)

  • Grated Parmesan cheese (optional)


👩‍🍳 Instructions

  1. Sauté the aromatics:
    Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 5–7 minutes until softened. Stir in garlic and cook 30 seconds more.

  2. Build the base:
    Add beans, diced tomatoes (with juices), broth, thyme, oregano, red pepper flakes, and bay leaf. Stir well.

  3. Simmer:
    Bring to a gentle boil, then reduce heat and simmer uncovered for 20–25 minutes to let flavors develop.

  4. Add greens:
    Stir in chopped kale or spinach and cook another 5 minutes until wilted.

  5. Finish:
    Remove bay leaf. Stir in lemon juice. Season with salt and pepper to taste.

  6. Serve:
    Ladle into bowls and top with parsley and Parmesan if desired. Serve with crusty bread.
