🥣 Hearty Tuscan White Bean Soup
A rustic, comforting soup inspired by the flavors of Tuscany — creamy white beans, aromatic herbs, and hearty vegetables simmered together for a nourishing meal.
🛒 Ingredients (Serves 4–6)

2 tbsp olive oil

1 medium yellow onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

2 cans (15 oz each) cannellini beans, drained and rinsed

1 can (14–15 oz) diced tomatoes

4 cups vegetable broth (or chicken broth)

1 tsp dried thyme
-
1 tsp dried oregano
-
½ tsp red pepper flakes (optional)

1 bay leaf

Salt & black pepper to taste

2 cups chopped kale or spinach
-
1 tbsp lemon juice
-
Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)
👩🍳 Instructions

Sauté the aromatics:
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 5–7 minutes until softened. Stir in garlic and cook 30 seconds more. -
Build the base:
Add beans, diced tomatoes (with juices), broth, thyme, oregano, red pepper flakes, and bay leaf. Stir well. -
Simmer:
Bring to a gentle boil, then reduce heat and simmer uncovered for 20–25 minutes to let flavors develop. -
Add greens:
Stir in chopped kale or spinach and cook another 5 minutes until wilted. -
Finish:
Remove bay leaf. Stir in lemon juice. Season with salt and pepper to taste. -
Serve:
Ladle into bowls and top with parsley and Parmesan if desired. Serve with crusty bread.
