🥑 Avocado and Egg Toast Recipe
A simple, nutritious breakfast that’s creamy, savory, and ready in under 15 minutes.
🛒 Ingredients (Serves 1–2)

2 slices bread (sourdough, whole grain, or your favorite)

1 ripe avocado

2 eggs (fried, poached, or scrambled)

1 tsp lemon juice (optional)

Salt, to taste

Black pepper, to taste

Red pepper flakes (optional)

Olive oil or butter (for cooking)
🔪 Instructions

Toast the bread
Toast slices until golden and crisp. -
Prepare the avocado
Scoop avocado into a bowl. Mash with a fork.
Add lemon juice, salt, and pepper to taste. -
Cook the eggs

Fried: Heat oil/butter in a pan over medium heat. Crack eggs in and cook to your desired doneness.

Poached: Simmer water, add a splash of vinegar, and poach eggs 3–4 minutes.

Scrambled: Whisk eggs and cook gently over medium-low heat until soft and fluffy.

Assemble
Spread mashed avocado evenly on toast.
Top with eggs. Sprinkle with salt, pepper, and red pepper flakes. -
Serve immediately
