🥑 Avocado and Egg Toast Recipe

A simple, nutritious breakfast that’s creamy, savory, and ready in under 15 minutes.


🛒 Ingredients (Serves 1–2)

  • 2 slices bread (sourdough, whole grain, or your favorite)

  • 1 ripe avocado

  • 2 eggs (fried, poached, or scrambled)

  • 1 tsp lemon juice (optional)

  • Salt, to taste

  • Black pepper, to taste

  • Red pepper flakes (optional)

  • Olive oil or butter (for cooking)


🔪 Instructions

  1. Toast the bread
    Toast slices until golden and crisp.

  2. Prepare the avocado
    Scoop avocado into a bowl. Mash with a fork.
    Add lemon juice, salt, and pepper to taste.

  3. Cook the eggs

    • Fried: Heat oil/butter in a pan over medium heat. Crack eggs in and cook to your desired doneness.

    • Poached: Simmer water, add a splash of vinegar, and poach eggs 3–4 minutes.

    • Scrambled: Whisk eggs and cook gently over medium-low heat until soft and fluffy.

  4. Assemble
    Spread mashed avocado evenly on toast.
    Top with eggs. Sprinkle with salt, pepper, and red pepper flakes.

  5. Serve immediately
    Optional toppings: sliced cherry tomatoes, feta cheese, microgreens, smoked salmon, or a drizzle of hot sauce.
