3 medium cooked beetroots, peeled and diced
(roasted or pre-cooked) -
1 large cucumber, thinly sliced

Dressing

2 tbsp olive oil

🔥 Instructions
1️⃣ Prepare the Veggies
Slice cucumber thin and dice the beets into bite-size pieces.
2️⃣ Make the Dressing
Whisk olive oil, lemon juice (or vinegar), honey, salt, and pepper until emulsified.

Gently toss beets, cucumber, red onion, and herbs with the dressing.
