🐟 Mediterranean Baked Cod with Lemon, Tomatoes & Olives
Ingredients (Serves 4)

4 cod fillets (about 6 oz each)

2 cups cherry tomatoes, halved

½ cup Kalamata olives, pitted and halved

3 cloves garlic, minced
-
1 small red onion, thinly sliced
-
1 lemon (zest + juice, plus extra slices for garnish)

3 tbsp extra-virgin olive oil
-
½ tsp dried oregano
-
¼ tsp dried thyme (or 1 tsp fresh)

Salt and freshly ground black pepper, to taste

2 tbsp fresh parsley, chopped
-
Optional: ¼ tsp red pepper flakes
Instructions

Preheat oven to 400°F (200°C). Lightly grease a baking dish or line with parchment paper.

Prepare the base:
In a bowl, combine cherry tomatoes, olives, garlic, red onion, lemon zest, lemon juice, olive oil, oregano, thyme, salt, pepper, and red pepper flakes (if using). -
Assemble:
Spread the tomato mixture evenly in the baking dish. Nestle the cod fillets on top. Spoon some of the tomato mixture over the fish. Add a thin lemon slice over each fillet. -
Bake:
Bake for 15–20 minutes, or until the cod flakes easily with a fork and reaches an internal temperature of 145°F (63°C). -
Finish & serve:
Sprinkle with fresh parsley and an extra drizzle of olive oil before serving.
