🔥 Instructions
1️⃣ Cook the Beef
Brown ground beef in a skillet over medium heat. Drain excess grease.
Stir in taco seasoning and water. Simmer 3–4 minutes until thickened.
2️⃣ Crisp the Tortillas
Lightly brush tortillas with oil.
Bake at 400°F (200°C) for 4–5 minutes per side or pan-fry until golden and crisp.
They should be crunchy — this is key!
3️⃣ Assemble
-
Spread a thin layer of refried beans on one tortilla.
-
Add seasoned beef on top.
-
Place a second tortilla over it.
-
Spread enchilada sauce over the top tortilla.
-
Sprinkle generously with cheese.
4️⃣ Bake
Bake at 400°F for 8–10 minutes until cheese is melted and bubbly.
5️⃣ Finish & Serve
Top with diced tomatoes, green onions, and any extras.
Slice into quarters and serve warm.
💡 Pro Tips
-
For extra authenticity, use a thin layer of mild taco sauce under the cheese.
-
Want it closer to the original? Keep toppings minimal (just tomatoes).
-
Make it spicy with hot enchilada sauce or chipotle powder in the beef.
