Roasted Tomato Caprese Salad: A Delicious & Easy Recipe

Ingredients (serves 2–4)

  • 2 cups cherry or grape tomatoes

  • 2 tbsp olive oil

  • Salt & freshly cracked black pepper

  • 1 tsp balsamic vinegar (optional but lovely)

  • 200 g fresh mozzarella (balls or sliced)

  • Fresh basil leaves

  • Balsamic glaze (for drizzle)

  • Optional upgrades: garlic cloves, chili flakes, flaky sea salt


How to make it

  1. Roast the tomatoes
    Heat oven to 200°C / 400°F.
    Toss tomatoes with olive oil, salt, pepper, and balsamic (if using).
    Roast 20–25 minutes until blistered, jammy, and lightly caramelized.

  2. Assemble the salad
    Arrange mozzarella on a platter.
    Spoon warm roasted tomatoes (and their juices!) over the cheese.

  3. Finish strong
    Add fresh basil, a drizzle of balsamic glaze, and a pinch of flaky salt.


Pro tips

  • Serve warm or room temp — cold kills the vibe

  • Don’t skimp on salt — tomatoes need it

  • Tear basil by hand for max aroma
