Roasted Tomato Caprese Salad: A Delicious & Easy Recipe
Ingredients (serves 2–4)

2 cups cherry or grape tomatoes

2 tbsp olive oil

Salt & freshly cracked black pepper

1 tsp balsamic vinegar (optional but lovely)

200 g fresh mozzarella (balls or sliced)

Fresh basil leaves

Balsamic glaze (for drizzle)

Optional upgrades: garlic cloves, chili flakes, flaky sea salt
How to make it

Roast the tomatoes
Heat oven to 200°C / 400°F.
Toss tomatoes with olive oil, salt, pepper, and balsamic (if using).
Roast 20–25 minutes until blistered, jammy, and lightly caramelized. -
Assemble the salad
Arrange mozzarella on a platter.
Spoon warm roasted tomatoes (and their juices!) over the cheese. -
Finish strong
Add fresh basil, a drizzle of balsamic glaze, and a pinch of flaky salt.
