1 thick slice of bread (white, sourdough, brioche—dealer’s choice)

¼–⅓ cup shredded cheese
(mozzarella, cheddar, Monterey Jack, or a mix) -
1 tbsp butter

Prep the bread
Use a spoon or small glass to press a shallow hole in the center of the bread (don’t punch all the way through). -
Butter & toast
Heat a nonstick pan over medium heat. Melt the butter and toast the bread on one side until golden. -
Flip & add cheese
Flip the bread. Sprinkle cheese around the hole and slightly on the edges. -
Add the egg
Crack the egg directly into the hole. Season with salt and pepper. -
Cover & cook
Cover the pan and cook 3–5 minutes, until the egg white sets and cheese melts.
(Cook longer if you want a firmer yolk.) -
Finish & serve
Garnish with green onions or herbs. Serve immediately while the yolk is dreamy.
