Bacon & Sausage-Stuffed Potato Loaf

(Crispy outside, fluffy potato inside, loaded filling)

Ingredients

Potato loaf

  • 1 kg / 2.2 lb potatoes, peeled & cubed

  • 2 eggs

  • ½ cup milk

  • ½ cup grated cheese (cheddar or mozzarella)

  • ½ cup breadcrumbs

  • 2 tbsp butter, melted

  • Salt & black pepper to taste

  • ½ tsp garlic powder (optional)

  • ½ tsp paprika (optional)

Filling

  • 200 g / 7 oz sausage (pork or chicken), crumbled

  • 150 g / 5 oz bacon, chopped

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • ½ cup grated cheese (cheddar, mozzarella, or mix)

For topping

  • 2–3 tbsp breadcrumbs

  • 1 tbsp melted butter

  • Extra cheese (optional)


Instructions

  1. Cook the potatoes

    • Boil potatoes in salted water until fork-tender

    • Drain and mash until smooth

    • Let cool slightly

  2. Prepare the filling

    • Cook bacon until crispy, remove and set aside

    • In same pan, cook sausage until browned

    • Add onion and garlic, sauté until soft

    • Mix in bacon, remove from heat

  3. Make the potato mixture

    • Add eggs, milk, butter, cheese, breadcrumbs, salt, pepper, and spices to mashed potatoes

    • Mix until smooth and thick

  4. Assemble

    • Grease a loaf pan

    • Spread half the potato mixture

    • Add sausage & bacon filling + cheese

    • Cover with remaining potato mixture, smooth top

  5. Top

    • Sprinkle breadcrumbs

    • Drizzle with melted butter

    • Add extra cheese if desired

  6. Bake

    • Bake at 180°C / 350°F for 40–45 minutes

    • Top should be golden and firm

  7. Rest & slice

    • Let rest 10 minutes before slicing
