Chicken Thighs with Caramelized Onions & Rice
🧄 Ingredients
Chicken

6 chicken thighs (bone-in or boneless)

2 tbsp olive oil or butter

1 tsp paprika
-
½ tsp garlic powder

½ tsp black pepper

Salt, to taste

½ tsp dried thyme or oregano
Caramelized Onions
-
3 large onions, thinly sliced
-
2 tbsp olive oil or butter
-
1 tsp sugar (optional, for deeper caramelization)

Salt, to taste

1 tbsp balsamic vinegar (optional)
Rice
-
1½ cups basmati rice
-
3 cups water or chicken broth
-
1 tbsp oil or butter
-
Salt, to taste
👩🍳 Instructions
1. Cook the Rice

Wash rice until water runs clear.

Boil water/broth with salt and oil.

Add rice, cover, and cook on low heat until fluffy. Set aside.
2. Caramelize the Onions

Heat oil or butter in a wide pan over medium-low heat.

Add onions and a pinch of salt.
-
Cook slowly for 20–25 minutes, stirring often, until deep golden.

Add sugar and balsamic vinegar (if using). Set aside.
3. Cook the Chicken

Season chicken thighs with paprika, garlic powder, pepper, salt, and herbs.

Heat oil in a pan over medium-high heat.

Sear chicken skin-side down (if skin-on) until golden.

Flip, lower heat, cover, and cook 12–15 minutes until tender and juicy.
4. Combine

Spoon caramelized onions over the chicken.

Simmer together for 2–3 minutes so flavors combine.
🍽️ To Serve

Serve chicken and onions over steamed rice.

Drizzle pan juices on top for extra flavor.

Garnish with fresh parsley (optional).
