  • Salt & black pepper to taste

  • 1 cup cherry tomatoes (halved)

  • ¼ cup Kalamata olives (sliced)

  • 1 tbsp capers (optional)

  • 1 small red onion (thinly sliced)

  • 1 lemon (sliced)

  • 2 tbsp fresh parsley or basil (chopped)

  • ¼ cup crumbled feta cheese (optional but recommended)


👩‍🍳 Instructions

  1. Preheat oven to 200°C (400°F).

  2. Prepare the baking dish:
    Lightly grease a baking dish with olive oil.

  3. Season the cod:
    Place cod fillets in the dish. Drizzle with olive oil, then sprinkle garlic, oregano, paprika, chili flakes, salt, and pepper.

  4. Add Mediterranean toppings:
    Scatter cherry tomatoes, olives, capers, and red onion around the fish. Place lemon slices on top.

  5. Bake:
    Bake uncovered for 15–18 minutes or until the cod flakes easily with a fork.

  6. Finish:
    Sprinkle fresh herbs and feta on top before serving.
