🍖 Ginger Lime Pork

500 g pork (tenderloin or boneless chops), sliced

2 tbsp fresh lime juice

1 tbsp fresh ginger, grated

3 cloves garlic, minced

1 tbsp honey or brown sugar

Ingredients:

1½ cups basmati or jasmine rice

1 cup coconut milk

1 cup water or chicken broth

½ tsp salt

1 tsp sugar (optional)

1 tsp oil or butter

👨🍳 Instructions
1. Marinate the Pork
In a bowl, mix olive oil, lime juice, lime zest, ginger, garlic, soy sauce, honey, salt, pepper, and chili flakes.
Add pork and coat well.
Marinate for 30 minutes (best: 2 hours).
2. Cook the Pork
Heat a pan on medium-high.
Add pork and cook for 4–5 minutes per side until golden and cooked through.
Remove and rest for 2 minutes.
3. Make Coconut Rice
Rinse rice well.
In a pot, add rice, coconut milk, water, salt, sugar, and oil.
Bring to a boil, then cover and simmer on low for 15 minutes.
Turn off heat and rest for 5 minutes. Fluff with fork.
4. Serve
Plate coconut rice, top with ginger lime pork, and add veggies on the side.
Garnish with fresh cilantro and lime wedges.
