Ingredients (Serves 8–10)

  • 2 sheets puff pastry, thawed

  • 120–150 g cooked ham, thinly sliced

  • 1½ cups shredded cheese (Gruyère, mozzarella, or mild feta blend)

  • 1–2 tbsp Dijon mustard or herbed cream cheese

  • 1 tbsp olive oil

  • 1 tsp dried oregano or Italian seasoning

  • 1 tsp fresh thyme or rosemary, finely chopped

  • 1 egg, beaten (for egg wash)

  • Black pepper, to taste

  • Sesame seeds or nigella seeds (optional, for garnish)

Instructions

  1. Preheat Oven
Preheat to 200°C (400°F). Line a baking tray with parchment paper.

  2. Prepare the Pastry
Roll out one puff pastry sheet. Spread a thin layer of Dijon mustard or herbed cream cheese evenly.

  3. Layer Fillings
Arrange ham slices over the pastry. Sprinkle cheese evenly, then add oregano, thyme/rosemary, and black pepper.

  4. Top & Seal
Place the second puff pastry sheet on top. Gently press and roll lightly to seal layers.

  5. Cut Tree Shapes
Cut the pastry into triangles (about 2–3 cm wide at the base). Insert a wooden skewer or rosemary sprig at the base to resemble a tree trunk.

  6. Create Branches
Make horizontal cuts on both sides of each triangle, leaving the center intact. Twist each strip alternately to form branches.

  7. Egg Wash & Garnish
Brush with beaten egg. Sprinkle with sesame or nigella seeds if desired.

  8. Bake
Bake for 15–18 minutes, or until puffed and golden brown.
