Mediterranean Garlic Lemon Herb Chicken

Ingredients:

  • 4 chicken breasts (or thighs)

  • 3 tbsp olive oil

  • 5 garlic cloves, minced

  • 1 tbsp lemon zest

  • 3 tbsp fresh lemon juice

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • ½ tsp paprika

  • Salt & pepper to taste

  • ¼ cup fresh parsley, chopped

Instructions:

  1. In a bowl, mix olive oil, garlic, lemon zest, lemon juice, oregano, thyme, rosemary, paprika, salt, and pepper.

  2. Add the chicken and coat well. Marinate for 20–30 minutes (or up to 4 hours).

  3. Heat a skillet or grill pan over medium heat.

  4. Cook the chicken for 6–7 minutes per side until golden and fully cooked.

  5. Garnish with fresh parsley and serve with cherry tomatoes, olives, rice, or salad.
