🌿 Mediterranean Veg Cutlet

Ingredients

  • 2 cups boiled mashed potatoes

  • ½ cup spinach (finely chopped)

  • ½ cup feta cheese (crumbled)

  • ¼ cup sundried tomatoes (chopped)

  • ¼ cup black olives (chopped)

  • 1 small onion (chopped)

  • 2 tbsp parsley (chopped)

  • 1 tsp oregano

  • ½ tsp black pepper

  • ½ tsp salt (adjust to taste)

  • ½ cup breadcrumbs (for coating)

  • 2 eggs beaten OR 3 tbsp flour + water paste

  • Oil for shallow frying


Steps (5 Easy)

  1. Mix mashed potatoes, chopped spinach, feta, olives, onions and sundried tomatoes.

  2. Add oregano, salt, black pepper and parsley. Form a soft dough.

  3. Shape into cutlets (round or oval).

  4. Dip in eggs or flour paste then coat well with breadcrumbs.

  5. Heat oil in a pan and shallow fry until both sides are golden.
