🥗 Mediterranean Grilled Chicken Salad 

Main Ingredients

  • 2 boneless chicken breasts

  • 5 tbsp olive oil

  • 2 tbsp lemon juice

  • 3 garlic cloves (minced)

  • 1 tsp dried oregano

  • ½ tsp paprika

  • ½ tsp black pepper

  • ½ tsp salt

Salad Base

  • 4 cups chopped romaine lettuce

Method

1️⃣ Marinate the Chicken

Mix:

  • olive oil + lemon juice + garlic + oregano + paprika + salt + pepper
    Coat the chicken, cover, and marinate for 30–60 minutes.

2️⃣ Grill the Chicken

  • Preheat grill pan or BBQ on medium heat

  • Cook chicken 5–6 minutes per side until golden and fully cooked

  • Remove, rest 5 minutes, then slice into strips

3️⃣ Assemble the Salad

In a large bowl add:

  • lettuce, cucumber, tomatoes, onion, olives, parsley

  • Place grilled chicken on top

  • Add feta cheese and seeds/nuts

4️⃣ Add Dressing

Shake/mix dressing and drizzle over salad. Toss gently.
