Diabetic-Friendly Magic Cookies
Ingredients:

1 cup rolled oats (gluten-free if needed)

1/2 cup chopped nuts (walnuts, pecans, or almonds)

1/4 cup unsweetened shredded coconut

1/4 cup sugar-free dark chocolate chips or chopped sugar-free chocolate

1/3 cup mashed ripe banana or unsweetened applesauce (natural sweetener)

1/4 cup natural nut butter (almond, peanut, or cashew butter)

1 tsp vanilla extract

Optional: a pinch of cinnamon or a few drops of stevia (to taste)
Instructions:

Preheat oven: Set oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix wet ingredients:Â In a bowl, combine mashed banana (or applesauce), nut butter, and vanilla extract until smooth.

Add dry ingredients:Â Stir in oats, nuts, shredded coconut, and sugar-free chocolate chips. Mix well to combine.

Form cookies:Â Scoop spoonfuls of the mixture onto the prepared baking sheet, flattening slightly to form cookie shapes.
