  • ½ tsp salt (for seasoning)

For Creamy Feta Filling

  • 1 cup feta cheese (crumbled)

  • ¼ cup Greek yogurt

  • 2 tbsp cream cheese

  • 1 tbsp extra virgin olive oil

  • 2 tbsp fresh dill (finely chopped)

For Honey Balsamic Glaze

  • 3 tbsp balsamic vinegar

  • 1 tsp olive oil

  • ½ tsp Dijon mustard

Instructions

1. Make the Glaze

  1. Whisk balsamic vinegar, honey, olive oil, and Dijon mustard together.

  2. Set aside. (You can also reduce it on low heat for 2–3 min for a thicker glaze, but not required)

2. Prepare Cucumber Spirals

  1. Slice the ends off the cucumbers.

  2. Using a vegetable peeler or spiral slicer, create long flat strips (or spiral ribbons).

  3. Gently roll each strip into a spiral “cup” shape.

  4. Sprinkle lightly with salt and rest 5 min to enhance flavor.

3. Make the Feta Filling

  1. Add feta, Greek yogurt, cream cheese, garlic, olive oil, lemon juice, lemon zest, pepper into a bowl.

  2. Mash and mix until smooth and creamy.

  3. Transfer to a piping bag or zip-lock (snip the corner).

4. Assemble

  1. Pipe filling into each cucumber spiral.

  2. Top with toasted chopped almonds and dill.

  3. Drizzle honey-balsamic glaze generously on top.

  4. Chill 10–15 min before serving for best taste.

Serving Tip

Serve on a platter with microgreens, cracked black pepper, and extra dill for a premium garden-fresh presentation!

Q&A

1. Can I make this ahead of time?

Yes! You can prep and fill the spirals 4–6 hours ahead. Add the almonds and glaze right before serving so they stay crunchy.

2. What if I don’t have a piping bag?

Use a zip-lock bag and snip the corner — works perfectly.

3. Can I replace almonds?

Absolutely. You can swap with:

  • Walnuts

  • Pistachios

  • Sesame seeds

  • Pumpkin seeds (for nut-free crunch)

4. My glaze is too runny, what do I do?

Simmer it for 2–3 min on low until slightly thickened, then cool.

5. How do I keep spirals from unrolling?

  • Use firm cucumbers

  • Dry strips slightly

  • Roll just before filling

  • The filling itself helps hold shape once piped in

6. Can I skip yogurt or cream cheese?

You can, but texture will change:

  • Skip yogurt → richer, thicker

  • Skip cream cheese → more tangy, less stable
Best is to keep both for creaminess + structure.

7. Is this keto/low-carb?

Yes. Very low-carb, high-healthy fats. You can reduce honey in glaze for strict keto.
