Instructions:

In a blender or bowl, mix eggs, cottage cheese, almond flour, vanilla extract, sweetener, and salt until smooth.

Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.

Pour a small amount of the batter into the skillet, swirling to form a thin layer.

Cook for 1-2 minutes on each side until golden brown.

Repeat with the remaining batter, stacking the crepes as you go.
