🍲 Mediterranean Creamy Mushroom Chicken & Wild Rice Soup

⭐ Ingredients
For the Chicken & Rice

2 cups cooked wild rice (or wild rice blend)

2 cups shredded cooked chicken (rotisserie or boiled)

2 tbsp olive oil

1 tbsp butter
Vegetables

1 medium onion, finely chopped

3–4 garlic cloves, minced

2 cups mushrooms, sliced

1 carrot, diced

1 celery stalk, diced

1 small red bell pepper, diced

1 cup fresh spinach (optional but recommended)
Liquids

4 cups chicken broth
-
1 cup milk or cream
-
½ cup Greek yogurt (gives Mediterranean tang)
Mediterranean Seasoning

1 tsp oregano
-
½ tsp thyme
-
½ tsp rosemary
-
1 tsp paprika

Salt & pepper to taste

Optional: pinch of chili flakes
For Extra Mediterranean Flavor

2 tbsp sun-dried tomatoes, chopped

2 tbsp fresh parsley, chopped

Juice of ½ lemon
🍳 Instructions
1. Sauté the vegetables
Heat olive oil + butter in a pot.
Add onion → sauté 2 minutes.
Add garlic, carrot, celery → cook 3 minutes.
Add mushrooms + bell pepper → cook until browned.
2. Add seasoning
Add oregano, thyme, rosemary, paprika, salt, pepper.
Mix well so the spices bloom in oil.
3. Add chicken & broth
Add shredded chicken, sun-dried tomatoes, and chicken broth.
Bring to a gentle simmer for 10 minutes.
4. Add the creaminess
Lower heat. Add:

Greek yogurt
Stir slowly so it becomes silky and thick.
5. Add rice & spinach
Add cooked wild rice and spinach.
Simmer 5 more minutes until creamy.
6. Finish
Turn off heat. Add fresh parsley + lemon juice.
