🥣 Chicken Vegetable Soup Recipe
✅ Ingredients

2 tbsp olive oil

1 medium onion, chopped
-
2 carrots, sliced
-
2 celery sticks, sliced

4–5 garlic cloves, minced

1 tsp salt (or to taste)

½ tsp black pepper
-
1 tsp paprika (optional)
-
1 tsp dried thyme or oregano
-
1 bay leaf
-
4 cups chicken broth
-
1–2 cups water (as needed)
-
2 chicken breasts (or leftover cooked shredded chicken)

1 tbsp lemon juice
-
Fresh dill or parsley, chopped
🥄 Instructions
1. Sauté the vegetables

Heat olive oil in a large pot.

Add onions, carrots, celery, and cook until softened.

Add garlic and sauté 1 minute until fragrant.
2. Add seasonings

Mix in salt, pepper, paprika, thyme, and bay leaf.

Stir well to coat the vegetables.
3. Add broth & chicken
-
Pour in chicken broth + water.

Add raw chicken breasts.
-
Bring to a boil, then reduce to low heat.
4. Simmer

Cover and cook for 25–30 minutes, until chicken is tender.
5. Shred the chicken

Remove chicken, shred it using two forks.

Put shredded chicken back into the soup.
6. Finishing

Add lemon juice and fresh dill or parsley.

Adjust salt and pepper as needed.

Simmer 5 more minutes.
