For Herb Grilled Chicken

  • 2–3 chicken breasts

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

For Creamy Pesto Pasta

  • 250g fettuccine or penne

  • 2 tbsp butter

  • 3–4 garlic cloves (minced)

  • 1 cup heavy cream

  • 3 tbsp basil pesto

  • ½ cup parmesan cheese (freshly grated)

  • Salt & black pepper

  • Optional: Red pepper flakes

For Roasted Potatoes

  • 2–3 medium potatoes (diced)

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp rosemary (fresh or dried)

  • Salt & pepper


🍗 Instructions

1️⃣ Marinate & Grill the Chicken

  1. In a bowl, mix olive oil, lemon juice, garlic powder, onion powder, paprika, oregano, thyme, Italian seasoning, salt & pepper.

  2. Coat chicken breasts evenly and marinate for 15–30 mins.

  3. Grill on a grill pan or skillet for 5–6 mins per side until charred and fully cooked.

  4. Let rest for 5 mins, then slice.


2️⃣ Prepare the Roasted Potatoes

  1. Toss diced potatoes with olive oil, garlic powder, paprika, rosemary, salt, pepper.

  2. Spread on a baking sheet.

  3. Roast at 220°C (425°F) for 25–30 mins until crispy and golden.


3️⃣ Make the Creamy Pesto Pasta

  1. Cook pasta according to package instructions; reserve ½ cup pasta water.

  2. In a pan add butter → sauté garlic until fragrant.

  3. Add heavy cream → simmer on low.

  4. Mix in pesto + parmesan → stir until creamy.

  5. Add pasta + splash of pasta water → toss until sauce clings perfectly.

  6. Season with salt, pepper, and red pepper flakes.


4️⃣ Assemble the Plate

  • Serve creamy pesto pasta first.

  • Add sliced herb grilled chicken on top.

  • Add crispy roasted potatoes on the side.

  • Garnish with parmesan + basil.
