🍍🍗 Mediterranean Teriyaki Chicken & Pineapple Foil Packets
Sweet pineapple, juicy chicken, herbs, olive oil, and a tangy Mediterranean-style teriyaki glaze — all cooked in easy foil packets.
⭐ Ingredients (Serves 4)
For the Chicken Packets

4 boneless, skinless chicken breasts or 6 chicken thighs
-
2 cups fresh pineapple chunks
-
1 red bell pepper, sliced
-
1 small red onion, sliced
-
1 small zucchini, sliced (optional)

2 tbsp olive oil
-
Salt & black pepper
Mediterranean Teriyaki-Style Glaze
(A fusion glaze using Mediterranean staples)

3 tbsp olive oil
-
2 tbsp balsamic vinegar
-
2 tbsp soy sauce (or tamari)
-
1 tbsp honey
-
2 garlic cloves, minced
-
½ tsp dried oregano
-
¼ tsp paprika
-
Juice of ½ lemon
-
Optional: pinch of chili flakes
Mediterranean Toppings

¼ cup chopped fresh parsley

2–3 tbsp crumbled feta (optional but delicious)

🧑🍳 Directions
1. Make the Mediterranean Teriyaki Glaze

In a small bowl, whisk together:

Olive oil

Balsamic vinegar
-
Soy sauce
-
Honey
-
Garlic
-
Oregano
-
Paprika
-
Lemon juice
-

Taste and adjust: add honey for more sweetness, vinegar for tang, or soy for saltiness.
2. Assemble the Foil Packets

Preheat oven to 400°F (200°C) OR preheat grill to medium-high.

Lay out 4 large sheets of aluminum foil (about 12–14 inches long).

Place a drizzle of olive oil in the center of each sheet.

Add sliced bell pepper, onions, and zucchini.

Place one chicken breast (or 1–2 thighs) on top of the veggies.

Add a handful of pineapple chunks around and on top.
-
Spoon 2–3 tbsp of glaze over each packet.

Season with salt and pepper.
3. Seal & Cook
Fold each foil sheet into a tight packet:
Oven:
Bake 25–30 minutes (breasts) or 30–35 minutes (thighs), until chicken is cooked through.
Grill:
Place packets over medium-high heat.
Cook 20–25 minutes, flipping halfway.
4. Serve

Carefully open packets (watch for steam).

Drizzle with remaining glaze, if desired.

Sprinkle with fresh parsley and crumbled feta.
