Ingredients

  • 1 lb (450 g) ground chicken or finely chopped cooked chicken breast

  • 1 cup shredded cheddar cheese (or a mix of mozzarella & cheddar)

  • 2 large eggs

  • ¼ cup almond flour (or crushed pork rinds for extra crispiness)

  • 2 tbsp mayonnaise (adds moisture)

  • 1 tbsp chopped chives or green onions

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • Salt & black pepper, to taste

  • Olive oil or butter, for cooking

👩‍🍳 Instructions

1️⃣ Mix the Batter
In a large bowl, combine ground chicken, cheese, eggs, almond flour, mayo, and seasonings. Stir until evenly mixed.
The mixture should be thick and sticky — if too wet, add a little more almond flour.

2️⃣ Form Patties
Scoop about 2–3 tablespoons of the mixture and flatten into small patties.

3️⃣ Cook

  • Pan method: Heat oil or butter in a nonstick skillet over medium heat.
    Cook patties for 4–5 minutes per side until golden brown and cooked through.

  • Oven method: Bake on a parchment-lined tray at 400°F (200°C) for 18–20 minutes, flipping halfway through for even browning.

4️⃣ Serve
Let cool slightly and serve warm. Garnish with extra chives if desired.
