🥗 Beetroot, Avocado & Feta Salad

🍽️ Serves: 2–3

⏰ Prep time: 15 minutes

⭐ Level: Easy

🧂 Ingredients

Salad:

  • 2–3 medium cooked beetroots (boiled or roasted), diced or sliced

  • 1 ripe avocado, diced

  • ½ small red onion, finely sliced (optional for sharpness)

  • ½ cup (75 g) crumbled feta cheese

  • 2 cups (about 60 g) baby spinach or mixed greens

  • 2 tbsp chopped walnuts or almonds (optional for crunch)

  • Fresh herbs (parsley, mint, or basil), chopped

Dressing:

  • 2 tbsp extra virgin olive oil

  • 1 tbsp balsamic vinegar (or lemon juice for a fresher taste)

  • 1 tsp honey or maple syrup (optional)

  • Salt and freshly ground black pepper, to taste

👩‍🍳 Instructions

  1. Prepare the beets:

    • If using raw beets, boil or roast them until tender, then cool and peel before dicing or slicing.

    • If using pre-cooked beets, simply drain and slice.

  2. Mix the dressing:

    • In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until emulsified.

  3. Assemble the salad:

    • In a large salad bowl or platter, layer the spinach (or greens) first.

    • Add the beetroot, avocado, red onion, and nuts.

    • Drizzle the dressing over and gently toss to coat.

  4. Finish and serve:

    • Top with crumbled feta cheese and fresh herbs.

    • Serve immediately or chill for 15–20 minutes for enhanced flavour.

🌿 Optional Additions

  • Add orange segments or pomegranate seeds for a fruity twist.

  • Swap feta for goat cheese if you prefer a tangier flavour.

  • Add cooked quinoa or lentils to make it a complete meal.

💡 Q&A Section

Q1: Can I use canned or pickled beetroot?
👉 Yes, but use plain cooked beetroot (not in vinegar) for a balanced flavour. Pickled ones will make the salad more tangy.

Q2: Can I make it ahead?
👉 Yes, but add avocado and feta just before serving to keep them fresh and creamy.

Q3: What protein can I add?
👉 Grilled chicken, salmon, or chickpeas pair beautifully with this salad.

Q4: What type of feta works best?
👉 Authentic Greek feta made from sheep’s milk gives the best creamy-salty contrast.

🍷 Serving Suggestions

Pairs wonderfully with:

  • Grilled fish or chicken

  • Whole grain bread or pita
