🍍 Honey Pineapple Glazed Salmon

Ingredients:

  • 4 salmon fillets (about 6 oz each)

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

  • 1 cup pineapple juice (fresh or canned)

  • 2 tablespoons soy sauce

  • 2 tablespoons honey

  • 1 tablespoon brown sugar (optional, for extra sweetness)

  • 2 cloves garlic, minced

  • 1 teaspoon grated fresh ginger (or ½ teaspoon ground)

  • 1 tablespoon cornstarch + 2 tablespoons water (for thickening)

  • ¼ cup pineapple chunks (optional, for topping)

  • Fresh chopped parsley or green onions (for garnish)

  • Lime wedges (for serving)


Instructions:

  1. Prepare the glaze:
    In a small saucepan, combine pineapple juice, soy sauce, honey, brown sugar, garlic, and ginger. Bring to a simmer over medium heat.

  2. Thicken the sauce:
    Mix cornstarch with water to make a slurry. Add it to the sauce and stir until thickened (about 2–3 minutes). Remove from heat and set aside.

  3. Cook the salmon:

    • Season salmon fillets with salt and pepper.

    • Heat olive oil in a large skillet over medium-high heat.

    • Add salmon, skin-side down, and cook for 3–4 minutes per side until golden and cooked through.

  4. Glaze the salmon:

    • Brush the thick pineapple-honey glaze over the salmon during the last minute of cooking.

    • Let it bubble and caramelize slightly.

  5. Serve:
    Plate the salmon and drizzle with extra glaze.
    Top with pineapple chunks and garnish with parsley or green onions.
    Serve with lime wedges, rice, or roasted veggies.


💡 Tips:

  • You can bake the salmon at 400°F (200°C) for 12–15 minutes and brush the glaze halfway through.

  • For a smoky flavor, broil for 1–2 minutes at the end.

  • The glaze also tastes amazing on shrimp or chicken!
