🥬 Coleslaw with Apples, Cranberries & Almonds

✅ Ingredients

For the slaw:

  • 2 cups shredded green cabbage

  • 2 cups shredded purple cabbage (optional but pretty!)

  • 1 large carrot, grated

  • 1 apple, thinly sliced or julienned (Honeycrisp/Green apple works best)

  • 1/3 cup dried cranberries

  • 1/3 cup sliced almonds (toasted if possible)

  • 2 tbsp chopped parsley (optional)

For the dressing:

  • 1/3 cup Greek yogurt (or mayo, or half-half)

  • 1 tbsp honey or maple syrup

  • 1.5 tbsp apple cider vinegar

  • 1 tsp Dijon mustard

  • Salt & pepper to taste

  • 1–2 tbsp olive oil (optional for creamier richness)


👩‍🍳 Instructions

  1. In a large bowl, combine cabbage, carrot, apple, cranberries, almonds, and parsley.

  2. In a small bowl, whisk together yogurt, honey, vinegar, mustard, salt, pepper, and olive oil.

  3. Pour the dressing over the salad and toss well.

  4. Chill for 15–20 minutes before serving for best flavor.


💡 Tips

  • Add sunflower seeds or pumpkin seeds for extra crunch.

  • Replace apple with pear for variation.

  • Add grilled chicken to turn it into a protein salad.

  • If prepping ahead, toss the apple with a little lemon to avoid browning.
