🍋 Lemon Chicken & Veggie Orzo Stir Fry
✅ Ingredients
For chicken:
- 
400g chicken breast, cubed 
- 
1 tbsp olive oil 
- 
1 tsp garlic powder 
- 
1 tsp paprika 
- 
Salt & pepper to taste 
For orzo & veggies:
- 
1 cup orzo pasta 
- 
1 tbsp olive oil 
- 
1 small onion, chopped 
- 
2 garlic cloves, minced 
- 
1 carrot, thinly sliced 
- 
1 small zucchini, diced 
- 
1 bell pepper, sliced 
- 
1 cup spinach 
Lemon sauce:
- 
2 tbsp lemon juice 
- 
1 tsp lemon zest 
- 
1 tsp Dijon mustard 
- 
1/3 cup chicken broth 
- 
Salt & pepper 
- 
Optional: red chili flakes & parmesan 
👩🍳 Instructions
- 
Cook orzo in salted water according to package instructions. Drain & set aside. 
- 
Heat olive oil in a pan, add chicken & season (paprika, salt, pepper, garlic powder). Cook until browned & done. Remove. 
- 
In the same pan, add olive oil, onion & garlic, sauté until fragrant. 
- 
Add carrot, zucchini, bell pepper, cook until soft. 
- 
Stir in spinach until wilted. 
- 
Add chicken back in. 
- 
Mix all lemon sauce ingredients and pour into the pan. 
- 
Add cooked orzo, toss well, cook 2 more minutes. 
- 
Serve warm — top with parmesan & chili flakes (optional).
