-
1 tsp onion powder (optional)

👩🍳 Instructions
1. Cook the Bacon
In a large pot or Dutch oven, cook chopped bacon over medium heat until crispy.
Remove bacon and set aside, leaving the rendered fat in the pot.
2. Brown the Meat
Add ground beef (and pork, if using) to the pot.
Cook until browned and slightly caramelized — about 10–12 minutes.
Drain excess grease if necessary (but keep some for flavor).
3. Add Seasonings
Stir in chili powder, paprika, cumin, salt, and pepper.
Mix well so the meat is coated evenly.
4. Deglaze & Simmer
Pour in beef broth or bone broth.
Scrape the bottom of the pan to release browned bits (this adds deep flavor).
Reduce heat to low and simmer uncovered for 30–40 minutes, stirring occasionally, until thickened.
5. Finish
Stir in butter or tallow for richness.
Taste and adjust seasoning (add more salt or chili powder if needed).
Top with crispy bacon before serving.
