🌾 Ingredients:

  • 1 cup oatmeal

  • ~1 glass warm water (for soaking the oats)

  • ½ medium pumpkin (about 800 g), peeled and chopped

  • 1 tbsp sweetener (optional — like stevia, honey substitute, or monk fruit)


🍞 Instructions:

  1. Soak the oats:
    Pour warm water over the oatmeal and let it soak for about 10–15 minutes until soft.

  2. Prepare pumpkin:
    Cut pumpkin into chunks and steam or microwave until tender (about 10 minutes).

  3. Blend:
    In a blender, combine soaked oats, cooked pumpkin, and sweetener.
    Blend until smooth and thick (like a batter).

  4. Pour into pan:
    Line a small loaf pan with parchment paper or use a silicone mold.
    Pour the batter in and smooth the top.

  5. Bake:
    Bake at 180°C (350°F) for 35–45 minutes, until firm and lightly golden on top.

  6. Cool & serve:
    Let it cool completely before slicing.
    Enjoy it plain or with peanut butter, yogurt, or fruit on top!

  • Add a pinch of cinnamon or vanilla for flavor.

  • For extra texture, mix in nuts or seeds before baking.

  • It can be stored in the fridge for up to 4 days.
