🥑 Avocado and Egg Toast Recipe

Ingredients (Serves 2)

  • 2 slices whole-grain or sourdough bread 🍞

  • 1 ripe avocado 🥑

  • 2 eggs 🥚 (soft-boiled, poached, or fried — your choice)

  • 1 tbsp olive oil or butter (optional, for toasting)

  • 1 tsp lemon juice 🍋

  • Salt and pepper, to taste 🧂

  • A pinch of red chili flakes or paprika 🌶️ (optional, for a little heat)

  • Fresh herbs for garnish (like dill, parsley, or chives) 🌿

  • Optional toppings:

    • Sesame seeds or flax seeds

    • Everything bagel seasoning

    • Feta or goat cheese crumbles


Instructions

1. Prepare the Avocado

  • Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl.

  • Add lemon juice, salt, and pepper.

  • Mash gently with a fork — keep it slightly chunky for texture.

2. Toast the Bread

  • Toast your bread slices until golden and crisp.

  • You can drizzle with olive oil or butter for extra flavor.

3. Cook the Eggs

Choose your style:

  • Soft-boiled: Boil eggs for 6½–7 minutes, then transfer to cold water, peel, and halve.

  • Poached: Simmer water with a splash of vinegar, crack in eggs, and cook 3–4 minutes until whites are set.

  • Fried: Heat a small pan with oil/butter and cook until whites are set and yolks are still runny.

4. Assemble

  • Spread mashed avocado evenly over each toast slice.

  • Place one egg (halved) on top of each.

  • Sprinkle salt, pepper, chili flakes/paprika, and herbs on top.

  • Add sesame seeds or feta if desired.


5. Serve & Enjoy!

  • Serve warm immediately with a squeeze of fresh lemon juice or a drizzle of olive oil.
