Ingredients:
For the Chicken:

Juice of 1/2 lemon
For the Orzo Bowl:

1 cup orzo pasta

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup Kalamata olives, sliced

1/4 cup crumbled feta cheese
-
Fresh parsley or mint for garnish
For the Lemon Feta Drizzle:

1/4 cup Greek yogurt

2 tbsp feta cheese
-
1 tbsp olive oil
-
1 tbsp lemon juice
-
1 tsp honey
-
1 clove garlic, minced

Salt & pepper to taste
Instructions:

Cook the Orzo:
Boil orzo in salted water according to package directions. Drain and toss with a drizzle of olive oil to prevent sticking. -
Season and Cook the Chicken:
Rub chicken breasts with olive oil, oregano, paprika, lemon juice, salt, and pepper.
Grill or pan-sear on medium heat until golden and cooked through. Slice into strips. -
Prepare the Lemon Feta Drizzle:
Blend or whisk together Greek yogurt, feta, olive oil, lemon juice, honey, garlic, salt, and pepper until smooth and creamy. -
Assemble the Bowl:
In a large bowl or plate, layer cooked orzo, tomatoes, cucumbers, onions, olives, and chicken slices.
Drizzle generously with the lemon feta sauce. -
Garnish:
Top with crumbled feta and fresh herbs for a bright finish.
