🥙 Greek Beef Wraps with Roasted Red Pepper Sauce

Ingredients

For the Beef:

  • 1 lb (450g) ground beef

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp ground cumin

  • ½ tsp paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • Juice of ½ lemon

For the Roasted Red Pepper Sauce:

  • 1 cup roasted red peppers (jarred or homemade)

  • ½ cup Greek yogurt (or sour cream)

  • 1 tbsp olive oil

  • 1 clove garlic

  • 1 tbsp lemon juice

  • Salt and pepper to taste

For the Wraps:

  • 4 large whole wheat or low-carb flatbreads/pitas

  • 1 cup chopped cucumber

  • 1 cup cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • ½ cup crumbled feta cheese

  • Fresh spinach or romaine lettuce

  • Optional: sliced Kalamata olives


🔥 Instructions

1. Cook the Beef

  1. Heat olive oil in a skillet over medium heat.

  2. Add garlic and sauté for 30 seconds.

  3. Add ground beef and cook until browned, breaking it up with a spoon.

  4. Stir in oregano, cumin, paprika, salt, and pepper.

  5. Squeeze in lemon juice, stir, and cook for another minute.

  6. Remove from heat and set aside.


2. Make the Roasted Red Pepper Sauce

  1. In a blender or food processor, add roasted red peppers, Greek yogurt, olive oil, garlic, lemon juice, salt, and pepper.

  2. Blend until smooth and creamy.

  3. Taste and adjust seasoning as needed.


3. Assemble the Wraps

  1. Warm the flatbreads or pitas slightly.

  2. Spread a generous spoonful of roasted red pepper sauce on each wrap.

  3. Add lettuce or spinach, cooked beef, cucumbers, tomatoes, and red onions.

  4. Sprinkle with feta cheese and olives.

  5. Roll or fold tightly like a wrap or gyro.
