🍲 Homemade Zero Points Chicken Chili
Hearty, spicy, and packed with protein — this guilt-free chili is a WW staple!
📝 Ingredients (Serves 4–6):
1 lb (450g) skinless, boneless chicken breast (diced or shredded)
1 small onion, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes (no added sugar or salt)
1 can (15 oz) crushed tomatoes
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can corn (no sugar added), drained
1½ cups low-sodium chicken broth
1 tbsp chili powder
1 tsp cumin
½ tsp smoked paprika
Salt & pepper, to taste
Optional: lime juice, chopped cilantro, jalapeños for heat
👩🍳 Instructions:
Sauté the Base:
In a large pot or Dutch oven, spray with nonstick spray.
Add chopped onion and garlic. Sauté for 2–3 minutes until fragrant.
Cook the Chicken:
Add diced chicken breast and cook until no longer pink (about 5–6 minutes).
If using precooked shredded chicken, add it in the next step.
Add Remaining Ingredients:
Stir in tomatoes, beans, corn, broth, and all spices.
Bring to a gentle boil.
Simmer:
Reduce heat and simmer uncovered for 20–25 minutes to let the flavors blend.
Stir occasionally.
Serve:
Top with fresh cilantro, lime juice, or a spoonful of fat-free Greek yogurt (also zero points!).
