🥗 Green Beans with Egg Yolk Dressing
(Blood Sugar Friendly Recipe)
Ingredients (Serves 2–3)

300 g fresh green beans (washed, trimmed, cut into 2–3 cm pieces)

2–3 hard-boiled egg yolks

1 tbsp extra virgin olive oil

1 garlic clove, minced (optional)

1 tsp lemon juice (or apple cider vinegar)

Salt & black pepper, to taste

Fresh herbs (parsley, dill, or basil), finely chopped – optional

A pinch of chili flakes – optional
Instructions
Step 1 – Cook the Green Beans

Bring about 4 cups of water to a boil in a medium pot.

Add ½ tsp salt to the water.

Add the green beans and cook for 4–5 minutes until they are tender but still bright green and slightly crisp.

Drain the beans and rinse them under cold running water to stop the cooking process and preserve their color.

Set aside in a large bowl.
Step 2 – Prepare the Egg Yolk Dressing

Place the hard-boiled egg yolks in a small bowl.

Mash with a fork until smooth and crumbly.

Add 1 tbsp olive oil and 1 tsp lemon juice (or vinegar).

Stir in the minced garlic, salt, and black pepper.

Mix until you get a creamy dressing. (Tip: if too thick, add 1–2 tsp warm water.)
Step 3 – Assemble the Dish

Pour the egg yolk dressing over the cooked green beans.

Toss gently until all beans are well coated.

Sprinkle with fresh herbs and chili flakes (if using).
Serving

Serve warm as a healthy side dish with grilled chicken, fish, or rice.
