🍞 Tasty Lentil Bread (Gluten-Free)

This bread is hearty, nourishing, and incredibly easy to make with just a handful of ingredients. No flour needed — red lentils are the star here!

  • Cook time: 40–45 minutes

  • Total time: ~3 hours (mostly inactive)

🧾 Ingredients

  • 1 ½ cups red lentils (soaked in water for 2 hours, then drained)

  • 2 large eggs

  • ½ cup plain yogurt (or Greek yogurt)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 2 tbsp olive oil

  • 2 tbsp fresh parsley or spinach (chopped, optional)

  • 1 tbsp sesame seeds (for topping, optional)

  1. Prepare Lentils

    • Rinse red lentils and soak them in water for about 2 hours. Drain well.

  2. Blend the Batter

    • In a blender or food processor, add soaked lentils, eggs, yogurt, olive oil, baking powder, baking soda, and salt.

    • Blend until smooth and creamy.

  3. Add Herbs

    • Stir in chopped parsley or spinach (optional, for extra flavor and color).

  4. Bake

    • Preheat oven to 180°C (350°F).

    • Pour batter into a greased loaf pan. Sprinkle sesame seeds on top if desired.

    • Bake for 40–45 minutes, until golden brown and a toothpick comes out clean.

  5. Cool & Serve

    • Let the bread cool completely before slicing. Enjoy plain, toasted, or with spreads!
