Ingredients:
- 
4 boneless, skinless chicken breasts 
- 
1 cup mushrooms, finely chopped 
- 
½ cup cream cheese, softened 
- 
½ cup shredded mozzarella cheese 
- 
3 tbsp butter 
- 
3 cloves garlic, minced 
- 
1 tsp dried thyme 
- 
1 tsp dried parsley 
- 
Salt & pepper, to taste 
- 
¼ cup grated Parmesan cheese 
- 
Fresh parsley, for garnish 
Instructions:
- 
Prepare the filling: - 
In a skillet, melt 1 tbsp butter over medium heat. 
- 
Add garlic and chopped mushrooms, cook until mushrooms release moisture and turn golden brown. 
- 
Stir in cream cheese, mozzarella, thyme, parsley, salt, and pepper. Mix until creamy. Remove from heat and let cool slightly.

Prepare chicken: - 
Preheat oven to 375°F (190°C). 
- 
Using a sharp knife, carefully slice a pocket into the side of each chicken breast (don’t cut all the way through). 
- 
Stuff each breast with the creamy mushroom mixture. Secure with toothpicks if needed. 
 
- 
- 
Cook chicken: - 
In an oven-safe skillet, melt remaining 2 tbsp butter over medium heat. 
- 
Sear chicken breasts 2–3 minutes per side until golden. 
- 
Sprinkle Parmesan cheese on top. 
 
- 
- 
Bake: - 
Transfer skillet to the oven and bake for 20–25 minutes, or until chicken is cooked through (internal temp 165°F / 74°C). 
 
- 
- 
Garnish & serve: - 
Remove toothpicks, garnish with fresh parsley, and serve hot with veggies, pasta, or rice.
