Carnivore Chilled Custard Bites (No Sweeteners)
Ingredients:
4 egg yolks
1 whole egg
1 cup heavy cream (raw or pasteurized, no additives)
1/4 cup unsalted butter (preferably grass-fed)
1/2 tsp vanilla extract (optional; omit if strict carnivore)
Pinch of salt
Optional: Beef gelatin (for a firmer, biteable texture)
Instructions:
Prepare the Custard Base:
In a medium bowl, whisk together egg yolks and the whole egg until smooth.
In a saucepan, heat the cream and butter on low until the butter melts and the mixture is warm (not boiling).
Slowly pour the warm cream mixture into the eggs while whisking (tempering to avoid scrambling).
Cook the Custard:
Return the mixture to the saucepan.
Cook on low heat, stirring constantly, until it thickens slightly and coats the back of a spoon. This may take 8–10 minutes. Do not boil.
Optional (Gelatin Version):
If you’d like a firmer texture, dissolve 1 tsp of beef gelatin in 2 tbsp of cold water. Let it bloom for 5 minutes, then stir into the warm custard until fully dissolved.
Chill:
Pour into small ramekins or silicone molds.
Chill in the fridge for 2–3 hours or until set.
