🥙 Roasted Veggie and Hummus Wraps
📝 Ingredients (Makes 4 Wraps):

2 cups chopped vegetables (e.g. bell peppers, zucchini, red onion, mushrooms, carrots)

1 tbsp olive oil

1 tsp Italian seasoning or cumin + paprika for a smoky vibe

Salt & pepper to taste

1 cup hummus (classic, roasted red pepper, or garlic flavor)

4 whole wheat tortillas or wraps

1 cup baby spinach or mixed greens

Optional: crumbled feta, sliced avocado, hot sauce, or balsamic glaze

1. Roast the Veggies:

Preheat oven to 400°F (200°C).

Toss chopped veggies with olive oil, seasoning, salt & pepper.

Spread on a baking sheet and roast for 20–25 minutes, stirring once halfway through, until tender and slightly browned.
2. Assemble the Wraps:

Warm the tortillas slightly (microwave 10–15 seconds or heat in a dry skillet).

Spread about 2–3 tablespoons of hummus on each wrap.

Add a layer of spinach or greens.

Top with a generous scoop of roasted veggies.

3. Wrap & Serve:
